Our award-winning Viognier/Chardonnay.

13 % ALCOHOL
CHARDONNAY 50% VIOGNIER 50%

Yields of 30 hectolitres per hectare from 18 year old vines.
Hand picked in late August in the cool of the morning.
Bunches are placed into crates, and stored in a coolroom until worked upon in the afternoon. Whole bunches (no destemming) are pressed, and the juice is cold fined for three days. Fermentation is activated by raising the temperature to trigger the natural yeasts. The wine is
raised on the lees in tank for 6 months.
5 hl. of chardonnay are barrel fermented in new oak barrels.
The three elements are blended and bottled in early spring.

About the name...

The origin of the name Aubais is the word alba meaning white, which refers to the white rocks that rose out of the sea bed 15 million years ago, and upon which the village and fortress were built. It is my white wine. There is also a reference to my original homeland Britain, the Albion, or as Napoleon called it: the perfidious Albion.
