Our Vinification Process
Manual Harvest
in Crates
Allows the bunches to arrive at the winery with no damage and therefore no
oxidisation.
We cool them in a coolroom if necessary.
Destemming
(to reduce risk of astringence from stems)
The berries are stripped from the stems in the destemmer.
Crushing of Grapes
The grapes are crushed before pumping into tanks.
Temperature Control
When using natural yeasts and minimum sulphites temperature control is the only
weapon
you have.
Control of Extraction in Pneumatic Press
A pneumatic press gives you control of the extraction process.
Barrel Ageing
French oak barrels of 600 litres are the container of choice.
Hygiene
The first and last rule of winemaking…clean it and clean it again. Even the crates are washed before going back to the vineyards.
