Organically farmed since 2002, our vineyards are mechanically weeded, the soil is tilled, organic fertilizers are applied and organic matter is returned to the soil. We apply homeopathic doses of biodynamic preparations regularly.
Individual bunches of grapes are harvested into crates in the cool of the morning, to arrive at the winery at low temperature. A manual harvest is three times more expensive than using machine but it's worth it to start the winemaking process with the grapes in perfect condition.
The use of indigenous yeasts, those that are naturally present on the grapes, allows the fermentation process to start and progress at its own speed. Our only intervention is temperature control via the cooling system integrated into our stainless steel tanks.
Maturation takes place in old 600 litre barrels of French oak from the Allier region. Only a small proportion of new oak is introduced into the chais every year. Wines like to pass the winter in wood.
Aubais is a medieval village located between Montpellier and Nimes in France's Languedoc region. Back when the villagers spoke Provençal, they were proud to say that they were from Aubais itself, 'd'Aubaï méma', rather than simply the general area. In 2002, I adopted the expression for my new domaine with equal pride. My long-held ambition to make wine became a reality when 10 hectares of vineyards in the outlying Liverna valley were purchased. Shielded from the worst of the weather by wooded hills and garrigue, the 50 year old carignan and grenache vines, and more recently planted syrah, cabernet sauvignon, chardonnay and viognier, have been cultivated organically from the outset.
My aim is to create real 'vins de terroir' that explore what each grape variety can express in terms of fruit imprinted with the character of their surroundings, a terroir of limestone and clay based on rock formations dating back 93 million years. Hand-picked bunches of grapes arrive at our winery in crates, where temperature-controlled stainless steel vats allow us to use natural yeasts exclusively.
